From the family’s own Madonie recipe book come soups and vegetable stews, homemade tagliatelle with wild boar ragout, spaghettoni with courgette fruit and leaves, paccheri pasta with fresh and aged pecorino cheeseand pepper, pork loins cooked in the oven with laurel , grilled platters, cheese and sausage platters from the Madonie, sautéed garden vegetables, sweet and sour vegetable platters, the famous caponata, the typical local dessert Turk’s head with cinnamon sauce, the “pasteddi fritti”, tiramisù.
